Apple Cake

You will need:

1 box of Yellow Cake Mix
1 cup will need flour
¾ cup sour cream
3 eggs
1½ cups milk
1 tsp. rum extract

Apples:

7 apples (peeled and sliced)
zest of 1 lemon
juice of 1 lemon
½ cup sugar
1 tsp. nutmeg
1 tsp. cinnamon
½ tsp. cloves

Brown Sugar Topping:

½ stick unsalted butter (melted)
¼ cup brown sugar
¼ cup granulated sugar
½ cup all purpose flour
2 tbls nutmeg
2 tbls cinnamon

Preheat oven 350 degrees:

In a large bowl combine all of the ingredients for the apples.

In a smaller bowl combine all of the ingredients with the cake mix.

Combine both bowls and place in two 8 x 8 inch greased baking pans.

Prepare the brown sugar topping by combining brown sugar, granulated sugar, flour, nutmeg and cinnamon.

Melt butter and place in bowl with the other ingredients and drizzle over the cake before baking.

Place in oven and bake for 35 – 40 minutes or until the knife test comes clean when inserted in the middle of the cake.

This is a moist, delightful dessert and a great way to use all of the delicious apples in season….
