Apple Dessert with Toffee Topping [del.icio.us]

This is a very easy apple dessert recipe. The final finesse, the liqueur, may be omitted if desired. In reality, the apples do not need that “kick”.

Apple Dessert

INGREDIENTS:
* 750 grams apples
* grated rind of 1 lemon
* grated rind of 1 orange
* 1 - 1 ½ dl (100 - 150 ml) sugar
* 1 tablespoon plain flour
* 1 dl (100 ml) almonds, chopped
* 50 grams butter

TOFFEE TOPPING:
* 1 ½ dl (150 ml) almonds, chopped
* 75 grams butter
* 1 ½ dl (150 ml) sugar
* 1 tablespoon plain flour
* 1 tablespoon milk
* 2 - 3 tablespoons orange liqueur, Cointreau or Grand Marnier

METHOD:
* Preheat oven to 225 degrees.
* Grease an oven-safe baking pan.
* Peel, core and slice the apples.
* Mix, lemon rind, orange rind, sugar, flour and chopped almonds.
* Arrange layers of sliced apples in the baking pan with layers of this mixture.
* Shave butter between the apple layers.
* Bake in the preheated oven for 10 - 15 minutes.
* Meanwhile, mix all the toffee ingredients in a saucepan.
* Bring it to the boil on low heat.
* Remove the baking pan from the oven.
* Pour the toffee topping over the apples.
* Bake again until the topping is golden brown and the apples are soft.
* Drizzle orange liqueur over the hot apples.
* Serve warm with softened vanilla ice cream.

We are being told to eat vegetables and fruits when they are in season, and avoid foods that may have travelled far. There are recommendations of an intake of at least five portions of fruit or vegetables per person per day to help reduce the risk of cancer, heart disease and some other chronic conditions. You have all heard the old saying: “An apple a day keeps the doctor away”.

About 90% of Swedish commercial fruit production (apples, pears, plums, cherries) takes place in the southern parts of the country - mostly cultivated for direct consumption. The Swedish winter apples keep very well in winter. They are in season right now.

Apples are the most consumed fruit. At the same time, around 1 million people in Europe are allergic to raw apples. I am one of them. I get a tickly throat from a bite into a whole raw apple. It lasts for several hours afterwards.

In my case, an apple a day may not keep the doctor away. However, I can eat apples cooked and baked, peeled and diced in salads.
