Apricot Cake
Apricot Cake Recipe
1 package lemon supreme cake mix
1/2 cup granulated sugar
1/2 cup vegetable oil
4 large eggs
1 can (11 1/2 oz.) apricot nectar, divided
1 cup confectioners’ sugar
Preheat oven to 350°F. Grease a fluted tube pan.
For cake: In large bowl, combine cake mix, granulated sugar, vegetable oil and eggs; mix well.
Reserve 1/8 cup apricot nectar for glaze. Add remaining apricot nectar to cake batter; mix well.
Spoon into tube pan. Bake 40 minutes or until toothpick inserted in center comes out clean.
Cool 10 minutes. Place cake on cake plate.
For glaze: In small bowl, combine confectioners’ sugar and reserved apricot nectar; mix well. Drizzle over cake.
