Asparagus occupies a significant place in Lombard cuisine. The first tender shoots of eagerly awaited. Asparagus has excellent health-giving benefits. It is low in calories but rich in Vitamin A and B and in minerals. Asparagus sprouts taste best when fresh.

I like dishes with asparagus mainly because they have delicious taste and all of them are very simple to cook. Well, one of my favourite breakfast servings is fried eggs with asparagus.

Ingredients (serves 2)

2 bunches of fresh green asparagus
4 eggs
Parmesan cheese, freshly grated
butter
salt and freshly grated pepper

Method

Peel he asparagus if necessary and cut off the woody ends. Tie the asparagus into a bundle and place in a deep saucepan with plenty of boiling salted water. Cover and cook for about 7-10 minutes. Drain and arrange on warmed plates and sprinkle with fresh grated Parmesan cheese.

Fry the eggs lightly in the butter and place carefully on top of the asparagus. Serve immediately.
