Cantadou® Chicken

Cantadou® is a creamy French cheese. In Sweden we can choose from 9 varieties to enjoy as a spread on crackers and toast or as a seasoning in cooking.

Cantadou® 4 pepper

Cantadou® with the four peppers - rose, green, black and white – gives this chicken dish a mild flavor but with a pleasant and distinctive aftertaste of pepper. Boiled rice is the best accompaniment to this simple chicken dish. It is tasty enough to serve to guests and yet not too complicated to make for a quick dinner for my husband and me.

Cantadou® Chicken

INGREDIENTS:

serves 4

* 600 grams (or 1.3 pounds) chicken breast meat

* vegetable oil and butter for frying ( more oil than butter)

* salt and pepper to taste

* 1-2 cloves of garlic

* 250 ml cream

* 200 ml chicken stock

* 125 grams Cantadou® 4 pepper

* 1 large bunch of roughly chopped flat leaf parsley

* 10 black deseeded olives

* 1 tablespoon lightly crushed rose pepper corns

METHOD:

1. Cut the chicken breasts lengthwise to make 3 or 4 pieces total.

2. Peel and chop the garlic roughly.

3. Heat oil in a skillet and add butter to oil.

4. Brown the chicken pieces on all sides.

5. Season carefully with salt and pepper to taste.

6. Pour cream and chicken stock over the chicken.

7. Add and mix in Cantadou®.

8. Simmer for about 10 minutes, or until the chicken is cooked through.

9. Add black olives and sprinkle with parsley and rose pepper.

Why do I mix oil with butter for frying?

If you want the flavor of butter, but need to cook something at a high temperature, you can replace some of the butter with a neutral flavored, high smoke point cooking oil. Butter burns easily. The presence of oil will not burn the butter.
