Chicken Herb Potatoes Recipe

4 large russet potatoes, scrubbed1 tbsp. butter1/2 onion, sliced1/2 red bell pepper, sliced1 celery stalk, sliced1 tsp. minced garlic1 cup chicken broth1 tsp. salt1/2 tsp. black pepper1/2 tsp. dried rosemary

1/2 tsp. dried thyme
1/4 tsp. dried sage

1. Preheat oven to 425°F.

2. Bake potatoes 1 hour. Allow potatoes to cool for 20 minutes. Peel and chop potatoes.

3. In large oven proof skillet, melt butter on medium heat. Add onion, bell pepper, celery and garlic. Cook 5 minutes or until tender.

4. Stir in potatoes and chicken broth. Bring to boiling.

5. Add salt, black pepper, rosemary, thyme and sage; mix well. Return to oven for 30 minutes.
