Easy Chocolate Zucchini Cake Recipe
1 2/3 cups granulated sugar
8 tbsp. butter, softened
1/2 cup vegetable oil
2 large eggs
1 1/2 tsp. vanilla extract
2 1/2 cups flour
1/3 cup unsweetened cocoa powder
1 tsp. baking soda
1/2 tsp. salt
1/2 cup buttermilk
2 cups zucchini, shredded
3/4 cup pecans, chopped
1 cup semisweet chocolate chips
1. Preheat oven to 325°F. Grease and lightly flour a 13×9 inch baking pan.
2. In large bowl, beat sugar, butter and oil with electric mixer set on medium speed until blended.
3. Add eggs; beat well. Stir in vanilla extract.
4. In medium bowl, combine flour, cocoa, baking soda and salt. Add to sugar mixture, alternating with buttermilk. Stir in zucchini until blended.
5. Pour into prepared pan. Sprinkle with pecans and chocolate chips.
6. Bake 55 minutes or until toothpick inserted in center comes out clean. Cut into squares.
