Easy Colcannon Recipe4 medium russet potatoes, peeled and cubed3 tbsp. butter3 tbsp. milk1/2 tsp. salt1 cup chicken broth2 cloves garlic, sliced1 1/2 cups green cabbage, grated3 green onions, slicedCover potatoes with salted water in large saucepan. Bring to boiling on medium high heat. Cook 20 minutes or until tender; drain.In large bowl, combine potatoes, butter, milk and salt. Mash until potatoes are smooth.In medium saucepan, simmer broth on medium heat. Add garlic. Cook 5 minutes. Add cabbage and green onions; cover.Cook 10 minutes or until cabbage is tender; drain.In large bowl, combine cabbage mixture and potatoes; mix well. Spoon into 2 quart baking dish. Cover, chill 2 hours.Preheat oven to 350°F.Bake 30 minutes.
