Garlic Mashed Potatoes
Garlic Mashed Potatoes Recipe1 large head garlic1 3/4 tsp. salt, divided2 1/2 lbs. Yukon Gold potatoes, peeled and cubed1/2 cup whipping cream1/2 cup milk2 tbsp. butter1 tsp. dried rosemay1/8 tsp. white pepperPreheat oven to 350°F. Slice off top third of garlic heat; discard top. Place garlic head on small square of aluminum foil. Rub garlic with oil and sprinkle with 1/4 teaspoon salt. Gather ends of foil and close tightly. Roast 45 minutes or until garlic is soft.Remove garlic from oven; cool. When cool, squeeze garlic cloves from skins; discard skin. Mash garlic in small bowl; set aside.Cover potatoes with water in large saucepan with 1 teaspoon salt. Bring to boiling. Reduce heat to a simmer. Cook 15 minutes or until tender. Drain; set aside.In small saucepan, combine cream, milk, butter and rosemary. Heat on medium high heat until butter melts, about 5 minutes.Mash potatoes until smooth. Add garlic and hot milk mixture; mash until smooth. Beat in remaining 1/2 teaspoon salt and pepper.
