Homemade Apricot Syrup
Apricot Syrup Recipe
5 1/2 lbs. apricots1 cup water3 tbsp. lemon juice4 cups granulated sugar
Peel and cut apricots in half. Remove pits. Process apricots in blender until pureed.In large saucepan, combine apricot puree, water and lemon juice. Bring to boiling on medium high heat, stirring constantly.Add sugar; stir until sugar is dissolved. Bring to boiling.Boil 10 minutes; remove from heat. Discard foam from top.Spoon into 4 sterilized jars, leave 1/2 inch headspace. Seal with 2 piece lids. Process in hot water bath 5 minutes.
Makes 4 Jars
