Lemon Bars

Lemon Bars Recipe
2 cups flour
1 cup butter
1/2 cup powdered sugar plus additional sugar for garnish
4 tsp. lemon zest, grated and divided
1/4 tsp. salt
1 cup granulated sugar
3 large eggs
1/3 cup lemon juice

Preheat oven to 350°F. Grease a 13×9 inch baking pan; set aside. In food processor, combine flour, butter, 1/2 cup powdered sugar, 1 teaspoon lemon zest and salt. Process until mixture resembles crumbs.

Press crumb mixture into baking pan. Bake 20 minutes or until golden.
In medium bowl, beat granulated sugar, eggs, lemon juice and remaining 3 teaspoons lemon zest with electric mixer on medium speed until blended.
Pour over warm crust. Bake 20 minutes or until set. Cool completely.
Sprinkle powdered sugar over top. Cut into bars.
Makes 3 Dozen Bars
Prep Time: 15 Minutes
Bake Time: 40 Minutes
