Mandarin Orange Cake

Mandarin Orange Cake Recipe
1 1/2 cups flour
3/4 cup granulated sugar
1/2 tsp. baking soda
1/4 tsp. salt
4 tbsp. butter
1 can (11 oz.) mandarin oranges, drained
1 large egg, beaten
1/3 cup unsweetened coconut, shredded
1/3 cup pecans, chopped
2 tbsp. light brown sugar, firmly packed
Preheat oven to 350°F. Grease a 9×9 inch baking pan.
In large bowl, mix flour, granulated sugar, baking soda and salt. Cut in butter with pastry blender until mixture is crumbly.
In medium bowl, combine mandarin oranges and egg; mix well. Add to butter mixture; mix well. Spoon into baking pan.
In small bowl, combine coconut, pecans and brown sugar; mix well. Sprinkle on top of batter.
Bake 25 minutes or until toothpick inserted in center comes out clean.
