Peach Barbecued Chicken
Peach Barbecued Chicken Recipe
1/4 cup flour
1/4 tsp. salt
1/4 tsp. black pepper
1 chicken, cut in 8 pieces
2 tbsp. butter
1 jar (9 oz.) peach jam
1/2 cup onion, chopped
1/2 cup barbecue sauce
2 tbsp. soy sauce
1/2 cup water chestnuts, drained and sliced
1 green bell pepper, cut in strips
In shallow bowl, combine flour, salt and black pepper. Coat chicken with flour mixture.
In large skillet, melt butter on medium high heat. Cook chicken 5 minutes per side or until browned. Drain skillet drippings.
In small bowl, combine jam, onion, barbecue sauce and soy sauce; mix well. Pour over chicken in skillet. Reduce to low heat.
Cover, cook 20 minutes.
Add water chestnuts and bell pepper. Cover, cook 5 minutes more.
Serves 4
