Plum Cake
Plum Cake Recipe
2 cups self rising flour
2 cups granulated sugar
1 tsp. cinnamon
2 jars (6 oz.) baby food plums and apples
1 cup vegetable oil
3 large eggs
3 tbsp. plums, chopped
2 tbsp. butter, softened
1 package (16 oz.) powdered sugar
1 tsp. grated orange zest
1. Preheat oven to 350°F.
2. For cake: In large bowl, combine flour, granulated sugar and cinnamon; mix well.
3. Add baby food plums and apples, vegetable oil and eggs to flour mixture. Beat with electric mixer on medium speed until blended. Spoon into 13×9 inch baking pan.
4. Bake 40 minutes or until knife inserted in center comes out clean. Cool.
5. For frosting: In large bowl, mix canned plus and butter. Add half of powdered sugar; mix well. Add remaining powdered sugar; mix well. Stir in orange zest. Spread over cooled cake.
