Potato and Bacon Frittata
Potato and Bacon Frittata Recipe
2 cups frozen O’Brien potatoes3 tbsp. butter5 large eggs1/2 cup bacon pieces1/4 cup half-and-half1/8 tsp. salt1/8 tsp. black pepper
Preheat broiler. In medium microwave safe bowl, microwave potatoes on high for 1 minute.In large oven proof skillet, melt butter on medium high heat. Add potatoes; cook 5 minutes, stirring occasionally.In medium bowl, beat eggs. Add bacon pieces, half-and-half, salt and black pepper; mix well.Pour egg mixture into skillet; reduce to medium heat. Stir gently to mix with potatoes. Cover; cook 10 minutes or until egg mixture is set on edges.Place skillet under broiler. Broil 4 inches from heat about 2 minutes or until center is set and lightly browned. Cut into wedges.
