Quick and Easy Chicken Recipe
I must confess, there exist more exciting ways to serve chicken but this is a wonderful mild dish that the whole family will love. It is not easy finding meals that is going to please the entire family, especially if you have both picky small children and even more picky elderly people at the table.
This chicken dish is also extremely quick and easy to make.

INGREDIENTS:
4 servings
* 4 skinless boneless chicken breasts (ab. 500 grams)
* 2 cloves of garlic
* butter
* 250-300 ml cream
* 1 chicken stock cube
* 2 teaspoons Dijon mustard
* 50 ml chives, chopped
* 1/4 cucumber
* 4 radishes
* ab. 70 grams bacon
METHOD:
1. Cut each chicken breast lengthwise to make flat fillets.
2. Peel and chop the garlic cloves
3. Heat the butter in a skillet over medium heat and brown the chicken fillets on all sides.
4. In a pot saucepan, combine cream, crumbled stock cube, mustard, garlic and chives.
5. Add the browned chicken, cover with a lid and simmer for about 8-10 minutes.
6. Slice the cucumber in half and then slice into half moons.
7. Finely slice the radishes.
8. Shred the bacon, heat the skillet, saute the bacon until crisped and drain on kitchen paper.
9. Stir cucumber and radish slices into the cream sauce and sprinkle bacon bits over the top.
Serve over rice (brown or white), pasta, or with boiled potatoes.
For those who find this too bland, I have a similar recipe on my blog. It uses whole chicken. Chicken Stew with Radishes
