Simple Sugar Cookies

Simple Sugar Cookies Recipe
2 cups flour, sifted
2 tsp. baking powder
1/2 tsp. salt
2 large eggs
3/4 cup sugar
2/3 cup vegetable oil
2 tsp. vanilla extract
1 tsp. grated lemon zest
1. In medium bowl, sift flour, baking powder and salt; mix well.
2. In large bowl, whisk eggs until blended. Add sugar, oil, vanilla extract and lemon zest; mix well. Stir dry ingredients into egg mixture until blended. Cover, chill 30 minutes.
3. Preheat oven to 400°F.
4. Drop cookie dough by teaspoonfuls 2 inches apart on ungreased cookie sheets. Mist bottom of a small glass with water and dip into additional sugar. Press each cookie lightly with glass, misting and dipping in sugar for each cookie.
5. Bake 10 minutes or until lightly browned. Cool 2 minutes before removing.
