Sour Cream Cake

Adapted from The Joy of Cooking Cookbook
You will need:
1 ¾ cups cake flour
¼ tsp baking soda
1 ¾ tsp double-acting baking powder
1/3 cup butter
1 cup sifted sugar
2 egg yolks
1 tsp vanilla
1 cup cultured sour cream
2 egg whites
Preheat oven 375 degrees:
Sift flour, baking soda, baking powder.
Cream butter until soft and gradually add sifted sugar and cream until light.
Beat in eggs yolks and vanilla.
Add the sifted flour mixture to the butter mixture and add the sour cream. Stir the batter until smooth.
Whip until stiff but not dry the egg whites and fold them lightly into the batter.
Bake in greased pans about 25 minutes.
When cool spread with Almond Raisin filling.
For the Filling:
¾ cup almonds (or your favorite nut)
Combine:
½ cup sugar
1 tablespoon grated orange rind
½ cup orange juice
1 tablespoons all-purpose flour
1 square Baker’s Semi Sweet Chocolate
½ cup water
1 ½ cups chopped raisins
Simmer these ingredients 5 minutes. Stir constantly. Add the nuts and ½ tsp vanilla.
Glaze:
1 cup powered sugar
3 tablespoons milk
1 tsp vanilla
Combine above ingredients in saucepan and stir until a thickened glaze forms. Drizzle over the cake .
This cake is simple and light and so well worth the time to make.
