Tea Cakes Recipe

1 cup granulated sugar

1 cup confectioners’ sugar

1 cup vegetable oil

1 cup butter, softened

2 large eggs

2 tsp. vanilla extract

1 tsp. salt

5 1/4 cups flour

1 tsp. baking soda

Colored sugar crystals

In large bowl, combine granulated sugar, confectioners’ sugar, vegetable oil, butter and eggs. Beat with electric mixer on medium speed until creamy.

Add vanilla extract and salt; mix well.

In large bowl, combine flour and baking soda; mix well. Slowly add to creamed mixture; beating constantly until mixed. Cover, chill 4 hours.

Preheat oven to 350°F.

Shape dough into 1/2 inch balls. Place on baking sheets. Flatten with bottom of small glass dipped in sugar crystals. Bake 15 minutes.

Makes 8 1/2 Dozen Cookies

Prep Time: 25 Minutes

Chill Time: 4 Hours

Bake Time: 15 Minutes
