White Cake

White Cake Recipe
This is a great recipe for a birthday cake.
3 cups cake flour
1 tbsp. baking powder
1/2 tsp. salt
10 tbsp. butter, softened
1 1/2 cups granulated sugar
1/4 cup marzipan
2 tsp. almond extract, divided
1 tsp. vanilla extract
1 cup milk
6 egg whites, stiffly beaten
2 cans (16 oz.) white frosting
3 cups whipped topping
1. Preheat oven to 350°F. Grease and flour three 9 inch cake pans.
2. In medium bowl, sift cake flour, baking powder and salt.

3. In large bowl, combine butter, 1 1/2 cups granulated sugar and marzipan. Beat with electric mixer on medium speed until fluffy. Beat in 1 teaspoon almond extract and vanilla extract. add flour mixture alternately with milk. Fold in beaten egg whites.

4. Pour batter into cake pans. Bake 25 minutes or until toothpick inserted in center comes out clean.
5. Cool on wire racks.
6. In large bowl, mix frosting and whipped topping. Stir in remaining almond extract. Spread between layers and over top and sides of cake.
