Yogurt, honey and nutsThe famous Greek or Turkish creamy yogurt is used as a basic ingredients for tzatziki, but it can also be topped with honey, nuts and grated dark chocolate. It is the perfect culmination to a rich meal.

INGREDIENTS:

Serves 4
* 500 grams creamy sugar-free yogurt
* 150 grams runny honey
* 200 grams nuts, coarsely chopped
* dark chocolate, grated (optional)

METHOD:
1. Spoon the yogurt into four dessert bowls.
2. Pour the honey over the yogurt.
3. Sprinkle with nuts.
4. Sprinkle with grated chocolate - if you like.

One of man´s oldest sweeteners is sweet honey. The flavor and color of honey are dependent on the flowers from which the nectar was taken.

There are many different varieties. We may purchase dark, strong-flavored honey and light-colored, aromatic honey, which can be runny or set. The difference between runny and set is the degree of natural crystallisation.

A beekeeper in my village, that I know personally, is using primitive stirring methods to make sure that the honey crystallize evenly. He is selling large buckets of set honey.

All honey starts out as runny, but Swedish honey sets quickly. There are higher demands for runny than set honey, and the Swedish beekeepers have solved that by adding more fructose to the product. That is what should make genuine honey runny.

Two tablespoons of honey contain about 126 calories, while two tablespoons of Swedish caster sugar contain about 78 calories. Honey is definitely sweeter than sugar, so we probably use less of it. Honey mainly consists of fructose and glucose and remain in individual units. Granulated table sugar has glucose and fructose hooked together. Fructose does not convert to energy as efficiently as glucose.

Is honey healthier than sugar? I don´t have an answer to that. Maybe it is slightly healthier. Like all foods, it depends on the quality of the honey.
