Zucchini Pie

You will need:
3 cups raw zucchini (diced)
4 eggs (beaten)
2 onions (chopped)
1 tablespoon parsley (chopped)
4 tablespoons olive oil
¼ cup parmesan cheese (grated)
1 cup bisquick
Preheat oven 350 degrees:
Combine all of the above ingredients and pour into a greased pie pan.
Bake for 30 – 35 minutes or until golden.
This is a recipe that I recently found looking through a very old cook book of my mother’s. It gives me much comfort to share it with all of you. It comes to you with wonderful memories and love.
